Harvested in the cool, early morning hours of a warm 2025 vintage, the grapes are channeled into a specialized Ganimede fermenter, utilizing a Burgundian yeast strain to enhance that signature fruit forward bouquet. After just eight days on skins, the wine is pressed, gently aged on
