Easier to mill than raw barley, it has only "chitted" or just started to germinate before it is lightly kilned in a manner similar to Admiral Pils to maintain a very light color. At 5 15% it gives great body, mouthfeel to a Helles or Pils and increased foam stability and head retention. At up to 25 40% it is useful to make a lower ABV beer. It can be used in place of dextrin malts or raw barley. It passes Reinheitsgebot law!
