The nose is more herbal with hints of smoke while the palate shows more of the herbs with hints of pineapple. Sotol is not distilled from agave, but from the Sotol plant or desert spoon. The most common sotol varietal is Dasylirion wheeleri, Asparagaceae, a plant that grows wild throughout the Southwestern United States and Northern Mexico.
